The true key is freezing the cookies before assembling your chipwich. While store bought cookies are already pretty sturdy, taking the extra step of popping them into the freezer will help ensure the ice cream doesn’t melt while you’re assembling these cookie ice cream sandwiches.
Then just sandwich the scoop of ice cream in the center using a cookie scoop or rubber spatula. Then, roll the sides of the ice cream sandwich cookie in your favorite toppings that you’ve placed in a medium bowl (to make it easy to roll).
Place the completely assembled chocolate chip cookie ice cream sandwiches on a sheet pan or baking sheet lined with parchment paper in the freezer to set and they’re ready to enjoy whenever!

This easy semi-homemade chocolate chip cookie ice cream sandwich recipe is about to become one of your favorite warm weather desserts!
Ingredients
- Vanilla Ice Cream (or whatever your favorite flavor is)
- Store bought chocolate chip or M&M cookies
- Optional toppings like mini chocolate chips, coconut flakes, sprinkles, sliced almonds or walnut pieces
Instructions
- Line a cookie sheet with parchment paper and pour your toppings into individual bowls. Place your cookies in the freezer first for about 10 minutes to get them nice and cold.
- Turn a cookie upside-down and place a scoop of ice cream onto it.
- Place another cookie on top, right-side-up, and press down gently.
- Using a knife or icing spatula, even out any ice cream that has come out of the sandwich.
- Roll the ice cream sandwich into the topping of your choice. If the toppings doesn’t seem to be sticking, you can also use your hand to press the topping into the ice cream.
- Place the finished ice cream sandwich on the prepared cookie sheet and place in the freezer for about 20 minutes to harden.
- Store by wrapping each ice cream sandwich in a piece of parchment paper or plastic wrap and place in a gallon freezer storage bag.
Notes
The ice cream sandwiches will last in the freezer for up to one month.
Tip: When you're ready to enjoy one, I recommend placing it on a plate at room temperature for a few minutes before eating, as the cookies might be a little too hard straight from the freezer.
