One of the things I love about brownie mix cookies is how it simplifies the whole cookie making process. All you need are a few ingredients to make this easy July 4th dessert this Independence Day:
Box of dark chocolate brownie mix
Eggs
Butter
Red, white and blue M&Ms
Cookie Sheet or Baking Sheet
How to Make July 4th Red, White and Blue Cookies
Line three large cookie sheets with parchment paper and set aside.
In a large bowl beat brownie mix, eggs and butter with a hand or stand mixer until well combined. Fold in ¾ cup of M&Ms. Chill dough for an hour before baking.
When ready to bake, preheat the oven to 350°F.
Scoop 2 tablespoon balls of chilled cookie dough onto parchment lined cookie sheets leaving at least two inches between each scoop. Bake for 10-12 minutes or until edges have set.
Remove cookies from the oven and immediately press 3-4 of the remaining M&Ms onto the top of each cookie. Allow cookies to cool on the cookie sheet for 10 minutes before transferring to a wire rack to finish cooling.

Tips for Making Brownie Mix Cookies
I recommend using a stainless steel scoop, like this one, to make sure your cookies are the same size. If you’re still using two spoons to scoop your cookies out, this will be a game changer for you! These small ones are perfect for cookies and worth the investment, especially if you love to whip up a ton of easy cookie recipes as holiday gifts.
If cookies go fast in your house too, simply double the recipe to double the batch of cookies.
Use parchment paper for easy clean up! The cookies will spread a lot during the baking process and may not be completely circular. To create a more uniform round cookie, use a circle cookie cutter that is slightly larger than the cookies and swirl it around the warm cookies to shape them.
While the cookies are best enjoyed the day they are baked, leftovers can be stored in an airtight container for up to five days. I recommend placing the cookies in the microwave for 10 seconds before enjoying.
