How to Make Boxed Cake Mix Cookies

You’ll love this easy cookie recipe. First, start by preheating your oven to 350℉ and lining two large cookie sheets with parchment paper.

Next, combine the box of cake mix, oil and eggs in a medium or large bowl. Stir until well mixed using a wooden spoon, but be sure not to over-stir! The batter should look like cake mix. Add M&M’s and mix to combine.

Scoop the cookie dough onto the parchment lined cookie sheets using a cookie dough scoop (like this one), leaving a 1 ½” gap between dough balls.

This recipe is so fun to play around with! Here are a few ideas for different flavors.

Experiment with different boxed cake mix flavors, like strawberry or vanilla. Really, any flavored cake mixes can be used as the base for this recipe. Just try different mix-in options to create something unique you love.

Substitute milk chocolate chips or white chocolate chips instead of the M&M’s for double chocolate cookies. Or, try peanut butter chips or small peanut butter cups for a totally different flavor combination!

Dust the top with powdered sugar.

Add your favorite frosting to the tops of these boxed cake mix cookies once cool, or try frosting just half of the cookie for a fun look.

Add sprinkles to the cookies to make them even more festive! Red or pink sugar sprinkles are perfect with these. Just add a little to the cookie batter before scooping.

Tips for Making Boxed Cake Mix Cookies

I recommend using a stainless steel scoop, like this one, to make sure your cookies are the same size. If you’re still using two spoons to scoop your cookies out, this will be a game changer for you! These small ones are perfect for cookies and worth the investment, especially if you love to whip up a ton of easy cookie recipes as holiday gifts.

If cookies go fast in your house too, simply double the recipe to double the batch of cookies.

Be careful not to over mix the batter.  Stir until just combined; otherwise, you might end up with tough cookies.

Use parchment paper for easy clean up! Store any remaining cookies in an airtight container.

This yummy cookies work great for so many birthday party themes! I’ve paired them with mermaid cupcakes before and the kids loved them. White chocolate raspberry cookies are another fun and festive idea for the holiday too.
