Sheet Pan Pancakes (also known as oven baked pancakes) are the easiest way to whip up breakfast in a fraction of the time! These are perfect for when you’re serving a crowd, or you just plain don’t want to stand around all morning making breakfast 😉 Includes a step by step video!

As a mom, I live and die by EASY recipes. While there are absolutely some days where I have the time and energy to make something involved, those days are few and far between lately. The truth is that most of the time I’m looking to make something delicious, fast and EASY for our family.

Enter these super Easy Sheet Pan Pancakes!

With two toddlers, we eat a lot of pancakes in our house. I have so many wonderful memories growing up of my dad and grandfather cooking hot, fresh and fluffy pancakes every Sunday… but some days it’s impossible to find the time!

That’s why I love this easy Sheet Pan Pancake recipe. While you can absolutely make your own pancake mix, this recipe is created with ease in mind and I use… store bought pancake mix! I know, the horror. But seriously, these Sheet Pan Pancakes come out perfect every single time, and the premade mix means that I can literally prep, mix and cook these up for a crowd in less than 10 minutes!

You end up with technically one giant pancake the size of your sheet pan, which becomes 12 square pancakes when you cut it up. Every single pancake is tender and fluffy, and ready in a fraction of the time it would normally take to cook 12 pancakes on your stovetop!

Sheet-pan pancakes are SO much easier than regular pancakes made in a hot pan. If you don’t already have a couple sheet pans in your kitchen arsenal, check out a few great options below. You can easily make entire meals using a sheet pan, and it makes clean up so simple too!

I’ve even cooked entire holiday dinners on sheet pans (totally lazy win there!), and this easy breakfast recipe is the perfect example of how easy sheet pans really make cooking for a crowd!  

Not only do oven baked pancakes make it so quick and easy to make breakfast for your family (or for a group!), they also make it easy to create different pancakes at the same time! Just bake a couple sheet pans at the same time with different toppings and mix in’s!

How to Make Sheet Pan Pancakes

Making oven baked pancakes is quick and easy, with a fraction of the effort. These are perfect for busy mornings, Christmas morning, a weekend brunch or honestly any time of the year you want a yummy pancake breakfast.

  • Line your baking sheet with foil and spray well with nonstick cooking spray.
  • Heat your oven to 425 degrees.
  • Mix up your favorite store-bought pancake batter (or a made from scratch recipe you love) in a large bowl and let it sit for a few minutes.
  • Pour the pancake batter in even layer onto baking sheet layered with parchment paper or aluminum foil. Gently shake the baking sheet if you need to spread out the batter. Add your favorite toppings.
  • Bake for 5-7 minutes and brush on some melted butter and a drizzle of maple syrup before serving!

If you notice any air bubbles, just very gently rock the sides of the pan, and let it sit for a few minutes.

Pancake Mix-in Ideas

If your family is anything like ours, I’m sure everyone prefers their own flavors and toppings on their pancakes, right?? Well, these oven baked pancakes make that so easy! This is a great recipe if you have family members who are picky, as it’s so easy to customize on the same pan.

  • Fruit – Nearly any sliced, fresh fruit works! We love sliced banana, strawberries and fresh blueberries.
  • Chocolate Chips – Semi-sweet Chocolate chips are usually the most popular option, but you can also just mix a few flavors or choose your favorite. for chocolate chip pancakes
  • Lemon and Poppy Seeds: Lemon zest, lemon juice and some poppy seeds add a bright fun flavor to these and are perfect for spring and summer! Some small pockets of ricotta cheese spooned on top make it even more indulgent.
  • Peanut Butter – Add peanut butter chips to the batter and top with a warmed fruit sauce or jam for the best PB&J ever.
  • Nutella – Add a few small spoonfuls of Nutella after pouring the batter into the pan, and then swirl it in with a toothpick before baking.
  • Dessert – After baking, top them with vanilla ice cream, whipped cream and chocolate!

Picky family members and only one tray? Just sprinkle one half of the tray with mix-in #1, and the other half with mix-in #2. DONE. Just be sure you pour batter evenly on the prepared baking sheet, or your toppings might come out lopsided!

Sheet Pan Pancakes (also known as oven baked pancakes) are the easiest way to whip up breakfast in a fraction of the time! These are perfect for when you’re serving a crowd, or you just plain don’t want to stand around all morning making breakfast 😉

Ingredients

  • Store Bought Pancake Mix
  • Water or Milk
  • Syrup
  • Additional Toppings like fruit, chocolate chips and whipped cream

Instructions

  1. Heat your oven to 425 degrees.
  2. Line your baking sheet with foil and spray well with nonstick cooking spray.
  3. Mix up your favorite store-bought pancake batter (or a made from scratch recipe you love). Depending on your mix, stick to the directions that call for either 1 or 2 cups of mix. Let the batter sit for a few minutes.
  4. Pour the pancake batter in even layer onto baking sheet. Gently shake the sheet pan to make sure that the batter is evenly spread, but be careful not to shake or knock the pan too hard (as this may deflate the batter).
  5. If you want to add any toppings like chocolate chips or sliced fruit, add gently add to top of the batter on the tray.
  6. Place the sheet pan in the center of your oven and bake for 5 - 7 minutes. Check the pancakes at 5 minutes - the pancakes are done if the center of the pancake is springy to the touch, and a toothpick inserted into the middle comes out clean. If they need more time, check every 2-3 minutes.
  7. If you would like for your pancakes to look more golden brown, brush the surface of the pancake with melted butter and place under the broiler for 1-2 minutes. They can very quickly burn, so be sure to keep an eye on them!
  8. Remove from the oven and slice the pancakes while hot into 12 individual square pancakes.
  9. Serve warm with whipped cream, syrup and other toppings!
